The world is your oyster

Literally and for a while - it was- as I put on my thick waders and headed out into the river to hear Declan explaining how Giles and Julia, a couple who lived in Coles Bay had nurtured an oyster farm and turned it into one hell of a successful business. The baby oysters are spawned and bought by the million or thereabouts. They look like a piece of gravel. In they go to an Oyster rack which is clipped onto to a rope and left there to grow in the brackish water of an estuary which is what they love best. As the river is tidal they have times above the water and times below to which they respond well. The racks are occasionally cleaned out but the oysters grow and are graded until the reach maturity when they are fattened up in deep water before they are collected and graded and sold by the dozen to hungry travellers and oyster lovers.
